My daughter turned three this past weekend. Since we just returned from a family cruise, we had not planned a big party but rather a small, cozy family celebration. One of our birthday traditions is that the birthday person picks what type of cake they want and I try my best to make it!

It was a Super Third Birthday

She currently loves three things: pink, Supergirl and Elsa. So it took her weeks to decide what themed cake she wanted. The day before I was planning to make the cake she chose—–Supergirl. Not just any cake though. A “doll” cake that looks like Supergirl! Ah, gotta love the mom-life challenges.

The simple doll cake method

Since I am not a professional baker nor do I bake as a hobby, there are a lot of modifications for this “doll” cake. So if you are looking for a simple way to create a doll cake then you are in the right spot! I must warn you still. This is not as simple as a layered circle cake or a sheet cake but it is not a perfectly laid out doll cake either. It does,however fulfill a three-year-olds wishes!

A semi-simple way to make a Supergirl doll cake

First steps are like any other cake. Prepare the batter. I went with our favorite boxed cake mix. Any cake works!

To meet the taste buds of both my kids, I baked one large cone shaped cake in chocolate then the small top and bottom for added height in white cake.  When I made an Elsa doll cake, I did not need the bottom layer but since these Supergirl dolls are so tall I needed extra height.

Once the cakes are completely cool, cut holes in the center. Make sure to not cut too large of holes. You will want the doll to fit snug.

Once you layer all the cake shapes together, stick the doll in. I recommend wrapping the lower portion of the doll with aluminum foil to keep icing from staining the doll; plus it helps her slide in easier. Now you are ready to start shaping the dress by cutting off some cake. This part is difficult for me. Just know that you can keep cutting off but it is difficult (though possible) to put the cake back on.

And then you add tons of icing and here is what the finished product looked like. I put it in the refrigerator overnight and then had a nervous 15 minute ride to my parents house the next day.

TIP: How to make red icing when you can’t find it anywhere

If your grocery stores are like mine, you may have a panic attack when you need red icing. My husband went on a search everywhere; it is clear that the large containers of red icing is a rare find in our city. I had tried using red coloring and gels with white icing before when baking baseball cupcakes – which turned out more pink than red. Instead of spending $25+ on the small tubes of red, he bought the Orange Funfetti icing and I added red food gel coloring with some red liquid food coloring. It came out perfect! So keep that in mind if you are having a red icing freak out.
